Reduced–Fat White Onion Velouté

Serves: 4 Prep Time: 5 minutes Cook Time: 15 minutes

Ingredients:

  • 4 medium white onions (peeled and sliced thin)
  • 1 Tbsp butter 2 ½ cups whole milk salt to taste
  • 2 Tbsp truffle oil Lumiére

Directions:

  1. Gently sweat sliced onions in butter in a medium sauce pan until translucent and tender.
  2. Add milk and bring to a boil. Remove from heat and blend immediately. Season with salt and truffle oil.
